Wild Asparagus - Idaho

It surprises me how many people don't know that asparagus grows wild along the ditch banks in Idaho and to be honest, I hope not too many people find out! Asparagus is like little stalks of gold in my house. Toss those delicious green stems in some olive oil and stick them on the grill for a while and you've got the perfect veggie to add to any meal.
Spring time when it starts to warm up is the perfect time to hunt for asparagus. It can be a really fun family outing that everybody gets rewarded for. If you do go hunting for this delightful roadside find there are a few things you should remember. Never go on private property to search for asparagus, there are plenty of spots along public roads, but it's always first come, first serve! Also remember that when cutting or breaking asparagus you should always cut it down at the root near the dirt, that way it grows back the next year. Keep and eye out for the small thick ones that grow among the roots of last years crop. Always be careful where you park and make sure your vehicle is out of the way of other vehicles on the road. Don't forget to take a sack, some scissors and some sharp eyes!

  2. My dad used to pull over to the side of the road between Twin Falls and Pocatello to pick asparagus when i was a kid. I figured everyone knew about this.
